Today on Brunch with Mimi, I'm sharing this easy Strawberry Mimosa Crostata Pie. It's simple and easy to make with very little ingredients. Crostatas peaked my curiosity when I saw it on IG one day and decided to look up ways to make it. I decided to make them bite size for a brunch delight. I also have some amazing mimosa jam I purchased which I will try to replicate in another post one day. As for now. I would replace it with a tangerine/orange jam, Only difference is that it wouldn't have a hint of champagne in it. But lets get started!

Ingredients

Makes about 10-12 cupcake sized crostata pies
  • 1 ¼  cup of all-purpose flour
  • 1 Tablespoon of granulated sugar
  • 1 stick of butter (1/4 pound)
  • pinch of salt
  • 1/8 cup of ice/cold water
  • plastic wrap
Filling : Fresh Strawberries, Mimosa Jam and Honey
Refrigeration time: 1 hour

Directions:

In a food processor, combine flour, salt and sugar. Mixed in diced butter and pulse for a couple of times till the butter has crumbled into smaller pieces. Continue pulsing a couple of more times while adding drops of the ice cold water. It should look like grainy clumps. This is how it should look like. It should not be completely mixed in. 

Take the dough out onto a well floured board. Roll dough out into a disk and place tightly into a place wrap. Refrigerate for at least an hour.

When ready, preheat oven to 450 F degrees. 

Filling: mix fresh strawberries, a few tablespoon of jam, and a tablespoon of honey.

Roll dough out to a thin sheet and use a cookie cutter to cut small circles. Place the circles into cupcake molds. Spoon the filling mixture into the molds. Bake the crostata pies for about 20 minutes or until crust is golden. Once done, remove from mold and let cool before serving.
