I thought I'd share one of my favorite time of the day - Brunch! So this little series - Brunch with Mimi - will display some of the items I love to make when I have Brunch at home. I'll make it a commitment to try to post a new recipe each Sunday!

I love love crepes, so much lighter than a regular pancake and always wrapped in loads of goodness! I will share another day my favorite crepe recipe, but today a pancake recipe that looks like a crepe! The Swedish Pancake!


Ingredients

Makes about 6-8 medium sized pancakes
  • ½  cup of all-purpose flour
  • 1 cup of milk
  • 2 eggs
  • ¼  teaspoon of vanilla extract
  • 2 tablespoon of unsalted butter (melted)
  • pinch of salt

optional: fresh fruits, crushed almonds, confectioners’ sugar, and maple syrup.









Directions

Combine flour, milk, eggs, vanilla extract, melted butter, and salt in the blender. Blend until smooth.

Warm up a skillet or small non-stick pan on medium heat. Coat the pan with some butter if necessary. Once warm, ladle around ¼ cup of the batter and quickly swirl the pan in a circular motion to create a thin circular layer. Cook until pancake sets, takes about 1 - 2 minutes. Turn the pancake over using a spatula. Cook other side for another 30 seconds to 1 minute. Remove from pan to plate. Repeat steps until batter is finished.

For presentation: Fold the pancakes in half and that half in half. It should look like a triangular cone shape ( ¼ of the circle). Stack a couple of the pancakes on each other in a line. Add garnish and serve.
